Easy Cod & Spinach Stew
  1. Heat olive oil in a large pan.

  2. Sauté the sliced red onion until soft, then add the garlic, smoked paprika, and oregano.

  3. Stir in the tinned chopped tomatoes and a splash of fish stock.

  4. Simmer for 10–15 mins until a rich thicker sauce forms.

  5. Add the spinach and let it wilt.

  6. Nestle in the cod fillets gently. You are basically poaching them in this sauce, cover, and simmer gently for 7–10 mins.

  7. Finish with lemon zest and parsley.
