Fresh peaches are ideal. If you decide to use frozen peach slices, thaw and then blot them dry before using.
Preheat oven to 350°F (177°C). Grease a 9-inch round cake pan.
In a medium bowl, whisk the flour, baking powder, baking soda, and salt together.
In a large bowl, whisk the oil, ⅔ cup granulated sugar, eggs, yogurt, vanilla extract, almond extract, lemon juice, and lemon zest together until combined.
Fold the dry ingredients into the wet ingredients until just combined. Do not overmix.
Gently fold in the sliced peaches.
Spread batter into prepared pan. Sprinkle the remaining 1 Tablespoon of granulated sugar and the optional cinnamon on top.
Bake for 40-45 minutes, until a toothpick inserted in the center comes out clean.
Allow to cool completely before serving. Dust with confectioners' sugar before serving, if desired.
