Mix all tofu marinade ingredients together (tamari, paprika, cumin, ground coriander, garlic granules, cayenne, oregano, msg)
Coat each tofu slice in the marinade and set aside to marinate for at least 30 minutes
Sprinkle the potatoes with cumin, oregano and a pinch of salt, then drizzle with oil and toss to coat
Lay the tofu slices and potatoes out flat on a lined baking tray and place in the oven at 200°C
Cook the tofu for 30-40 minutes until browned and slightly crisp, turning halfway
Cook the potatoes for 15-20 minutes, turning halfway, until tender and golden
For the chermoula: add all ingredients to a food processor and pulse until it comes together but isn't completely smooth
Mix all the mayo ingredients together
Toast your bread
Assemble your sandwiches with garlic and herb mayo, rocket, tofu, potatoes and chermoula
