Mushroom & Spinach Lasagna Rolls
  1. Boil the Noodles: Bring a large pot of salted water to a boil. Cook the lasagna noodles according to the package instructions until they are al dente.

  2. Drain and Cool: Drain the noodles and lay them out on a baking sheet or parchment paper to prevent them from sticking. Set aside.

  3. Cook the Mushrooms: In a large skillet, heat the olive oil over medium heat. Add the chopped mushrooms and cook for about 5–7 minutes, or until they release their moisture and start to brown.

  4. Add Garlic and Spinach: Add the minced garlic to the skillet and sauté for 1–2 minutes until fragrant. Then, add the chopped spinach and cook for another 2–3 minutes until the spinach is wilted. Remove from heat and let cool slightly.

  5. Combine Filling Ingredients: In a large mixing bowl, combine the cooked mushroom and spinach mixture, ricotta cheese, shredded mozzarella, grated Parmesan, beaten egg, Italian seasoning, salt, and pepper. Stir until everything is well mixed.

  6. Preheat Oven: Preheat your oven to 375°F (190°C).

  7. Spread Sauce in Baking Dish: Spread about ½ cup of marinara sauce evenly on the bottom of a greased 9×13-inch baking dish.

  8. Spread Filling on Noodles: Place a lasagna noodle on a flat surface. Spread a generous amount of the mushroom and spinach filling evenly along the length of the noodle.

  9. Roll the Noodle: Starting from one end, carefully roll up the noodle with the filling inside.

  10. Place in Baking Dish: Place each rolled-up noodle seam-side down in the prepared baking dish. Repeat with the remaining noodles and filling.

  11. Top with Marinara Sauce: Spoon the remaining marinara sauce evenly over the lasagna roll-ups, making sure each roll is covered.

  12. Add Cheese: Sprinkle shredded mozzarella and grated Parmesan cheese over the top of the rolls.

  13. Cover and Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.

  14. Remove Foil and Continue Baking: After 20 minutes, remove the foil and bake for an additional 10–15 minutes, or until the cheese is melted, bubbly, and lightly golden.

  15. Let Cool Slightly: Remove the lasagna roll-ups from the oven and let them cool for a few minutes to set.

  16. Garnish: Sprinkle with fresh basil or parsley for a pop of color and added freshness.

  17. Serve: Serve warm with garlic bread or a side salad for a complete Italian-inspired meal.
