Upside Down Puff Pastry Onion Tart
  1. Pre-heat the oven to 170C (fan) and line 2 baking trays with parchment paper.

  2. Roll out the puff pastry and divide into 8 even rectangles.

  3. Drizzle olive oil onto the baking trays, followed by balsamic vinegar, salt, pepper, and fresh thyme.

  4. Lay onions onto the seasoned mixture, then slather each pastry rectangle with cream cheese and place it on top of the onions.

  5. Use a fork to make indentations around the edges of each pastry tart.

  6. Brush each tart with the egg wash and bake for 25 mins or until golden.

  7. Allow the tarts to cool for 5 mins and then flip them over before serving.
