Rub the chicken breasts with olive oil and season them with garlic powder, onion powder, paprika, ground ginger, salt, and pepper.
Place the chicken breasts on the griddle and cook for 6-7 minutes per side, or until fully cooked through and the internal temperature reaches 165°F (75°C).
While the chicken is cooking, add the zucchini, bell pepper, and onion to the griddle. Drizzle with a little olive oil and cook for 3-4 minutes, stirring occasionally, until they are tender and lightly charred.
Once the chicken is cooked, remove it from the griddle and let it rest for a few minutes before slicing it.
In a small bowl, whisk together soy sauce, teriyaki sauce, and sesame oil. Drizzle this sauce over the chicken and vegetables.
Garnish with sesame seeds, if desired, and serve immediately.
