Preheat your oven to 375°F (190°C).
In a bowl, toss baby potatoes with olive oil, salt, pepper, and any other seasonings you like until they are well coated.
Place four potatoes in each cup of a muffin pan (adjust according to size of your muffin pan).
Bake for about 12 minutes, or until the potatoes are tender when pierced with a fork.
Remove muffin pan from oven. Using a shot glass or the back of a spoon, gently smash each potato in pan until they are flattened but still hold their shape.
Place a cheese block in center of each smashed potato.
Return muffin pan to oven and bake for an additional 3 minutes, or until cheese is melted and bubbly.
Remove from oven and let cool slightly before serving.
