Heat a pan on medium-high heat, add the ghee, then fry off garlic, onion and ginger for 3 minutes or until soft and translucent.
Add the spices and cook for a further 2-3 minutes or until aromatic. Take off the heat.
Transfer the onion and aromatic mix to the slow cooker, add the remaining ingredients aside from the coriander.
Cook on high for 4 hours.
When finished, stir in half the coriander. Taste and season with more salt and coconut sugar if needed.
Serve with rice, hot.
