Minted Peas
  1. Melt 2 tbsp Butter in a pan. Add 4 Spring onions (Scallions) and cook over a low heat for 2 minutes.

  2. Add 330 g Frozen peas and 2 tbsp Fresh mint. Mix well.

  3. Add enough boiled water to cover all the peas. Put a lid on the pan and return to the heat for 2-3 minutes.

  4. Drain the peas. Add 1 pinch Sea salt, 1 pinch Ground black pepper, juice and zest of 0.5 Lemon, 1 tbsp Olive oil and 1 tbsp Fresh mint. Mix well and serve.
