Gnocchi alla Sorrentina
  1. Preheat oven to 425

  2. Cook gnocchi

  3. On low-medium heat a large pan and add oil, sliced garlic, butter and anchovy. Cook until fragrant

  4. Add cherry tomatoes, simmer 3-5 minutes until skin begins to winkle

  5. Add tomatoes and let simmer for 10 minutes

  6. Add gnocchi, stir to combine

  7. Transfer half to oven dish, add half of the mozzarella

  8. Add remaining gnocchi mix, top with rest of cheese and handful of Parmesan

  9. Bake 10-15, until cheese is slighted browned

  10. Let sit to thicken
