  1. Place a sheet of rice paper on a pan over medium heat

  2. Brush lightly with oil

  3. Crack 1 egg on top and spread it thin with your spatula

  4. Add green onions, sausage/ham, crispy shallots, or any toppings you like

  5. Drizzle a little mayo + sriracha (optional but so good)

  6. Let it crisp for 1–2 minutes

  7. Fold it in half

  8. Press until golden, crispy, and crackly

  9. Slice or eat whole
