Heat a large deep pan on medium high and add 1 tbsp of sun dried tomato oil. Add diced chicken, season with 2 tsp Italian seasoning, big pinch salt and pepper, and fully cook (5-7 min). Remove from pan.
Add butter and onion, cooking for 1 min until fragrant. Add garlic, tomato paste, 1 tsp Italian seasoning, pinch red pepper flakes and cook 1-2 more minutes.
Deglaze with white wine, add chicken broth and milk and bring to a gentle simmer.
Add gnocchi and cook according to package instructions, until they float. Add sun dried tomatoes, parmesan, spinach, basil, stirring until spinach is wilted and cheese is melted.
Stir in the cooked chicken, season with any more salt to taste and serve with fresh lemon juice!
