Add dough ingredients to bowl of stand mixer with dough hook attachment. Mix until dough forms a mass, then increase speed and mix until smooth.
Divide dough into 4 pieces, shape into balls, and refrigerate for 1-2 days. Bring to room temp before using.
Make sauce by pureeing tomatoes, tomato paste, herbs, spices, salt, and sugar. Cook with garlic until reduced by half.
Preheat oven with pizza steel/stone. Grate mozzarella and freeze. Roll out dough, add cheese, sauce, and toppings. Bake for 6 minutes.
Cool slightly before cutting and serving.
