Preheat oven to 350°F (177°C). Lightly grease or butter two 10- ounce ramekins.
Mix together the apple chunks, brown sugar, flour, cinnamon, nutmeg, and salt in a medium bowl, then divide into the two ramekins.
Whisk the flour, brown sugar, baking powder, cinnamon and salt together in a salt bowl. Stir in the melted butter until a crumbly mixture forms. Crumble over the filling.
Bake for 30-35 minutes or until the topping is golden brown and the apples are cooked through and tender. Remove from the oven, place on a wire rack, and allow to cool for 5-10 minutes before serving. Serve warm, room temperature, or cold; plain or with salted caramel and/or vanilla ice cream.
