Bloom water, yeast, and sugar for 15 min.
Add flour in several batches. Bring together in bowl until all flour wet. Refrigerate overnight.
Next day, gently turn out on a well floured bench - well floured stops sticking which prevents surface bubbles bursting. Fold in half. That's it.
Cut into 5 or 6 equal sized bread rolls. They will be odd shapes, ok so long as they are approximately the same size.
Use bench scraper to transfer to tray - this is a V soft mix. Slash if desired.
Bake 15 - 20 mins 240°C.
