Blend 2 onions until paste like, then add to 1kg minced meat (beef, lamb or mix).
Add about 50ml olive oil (less if you want healthier), 4 heaped tbsp yoghurt, 2 tbsp paprika, 2 tbsp pepper, 2 tbsp chilli flakes, 2 tbsp cumin, 2 tbsp oregano, 1-2 tbsp salt.
Mix together until smooth and well incorporated.
Spread super thinly onto square sheets of parchment paper, should be only a few mm thick.
Roll up tightly and repeat, then add to a baking tray and bake at 200°C for 20 mins.
Take out, drain excess liquid and bake again for another 15 minutes or until paper is going a dark brown.
Remove, unravel, top with lemon juice and (optionally) bake for a further 5-10 mins to add some crisp.
Serve with salad and pita.
