Soak 24 pitted dates in 1.5 cups hot water for 1 hour.
Add soaked dates and water to blender.
Add 1 tbsp coconut butter, 1 tsp cinnamon, 1 tsp vanilla.
Blend for 1 minute to make 2 cups of date paste.
Add 0.5 cup organic coconut milk and 0.5 tsp sea salt.
Blend for 1 more minute.
Let the caramel thicken overnight in the fridge.
