Cheeseburger Breakfast Casserole
  1. Preheat oven to 400F.

  2. Add sliced mushrooms to a pan over medium-low heat, with no oil at first. Let the mushrooms cook until they let out their water and the water boils off.

  3. Then, add oil, diced onion, and diced bell pepper to the same pan. Cook until onions are caramelized and browned.

  4. Remove veggies from the pan. Add 1 lb of ground beef to the pan, increase the heat to medium.

  5. Break the beef up into crumbles and season with salt and pepper. Cook until completely browned.

  6. Remove pan from heat and mix veggies back in.

  7. Spray a 13x9 baking dish with avocado oil.

  8. Crack 12 eggs into a mixing bowl. Add milk, salt, and pepper. Whisk them together until fluffy.

  9. First, pour beef and veggie mixture into the baking dish. Then, pour the whisked eggs over the beef and veggies.

  10. Season with salt and pepper.

  11. Sprinkle cheddar cheese all over the top of the dish.

  12. Bake in the oven at 400F for 30 minutes.

  13. Remove from the oven and cut into 12 individual squares.
