Preheat the oven to 425℉ (218°C). Line a sheet pan with parchment paper and spray with olive oil spray.
Wash and peel your sweet potatoes. Cut them into 1 inch cubes and coat with olive oil, kosher salt, pepper, garlic powder, and smoked paprika.
Add the sweet potatoes to the baking sheet in a single layer and bake in the preheated oven for 25-30 minutes.
Heat a large skillet on medium heat. Add olive oil until heated. Add the ground beef and break apart with a wooden spoon. Cook for 2-3 minutes until the beef starts to brown.
Add the seasonings, water, and tomato paste to the beef. Continue to cook until the beef is cooked through, about 5-7 minutes.
Assemble the taco bowls by adding the cooked ground beef, cottage cheese, avocado, sweet potatoes, and optional tomatoes and greens to a serving bowl. Drizzle hot honey on top.
