One-pan Roast Chicken And Kale
  1. Preheat oven 400F/200C.

  2. In a small bowl, combine the salt, pepper, garlic powder, paprika, and onion powder for the chicken seasoning. Mix and set aside.

  3. Pat the chicken pieces dry with paper towels. Set aside.

  4. Toss kale leaves, sweet potato, and cauliflower together with the extra light olive oil.

  5. Spread vegetables evenly in a large baking dish. Do not worry if it looks like a lot; it will sink as it cooks.

  6. Layer sliced onions on top of the vegetables. Season with salt and pepper.

  7. Lay the chicken on the vegetables, skin side down and sprinkle half of seasoning over the chicken pieces.

  8. Flip the chicken pieces over so they are skin side up and sprinkle the remaining seasoning over them.

  9. Cover the baking dish with foil or a lid and bake for 25 minutes.

  10. Remove the foil or lid and roast for another 35 minutes until chicken is cooked (internal temperature should be 165F/74C) and vegetables are tender. Serve immediately.

  11. Serve with lemon wedges, if desired.
