Easter Leg Of Lamb

    Oven temp is 150C

  1. Prepare the leg of lamb by seasoning it with salt, pepper, studding with garlic and rosemary. Mix lemon zest, juice, s&p, olive oil and honey.

  2. Place the lamb in a roasting tray on a bed of the onions, carrots, potatoes and a few lengths of extra rosemary. Pour over honey oil mix.

  3. Pour the lamb stock around the lamb.

  4. Dot the butter over the top of the lamb and vegetables. Cover tray tightly with foil.

  5. Roast the lamb in the oven for four hours, turn the leg over and cook for a further hour uncovered, or until it is cooked through and tender, basting occasionally with the cooking juices.

  6. Serve the lamb with the roasted vegetables and cooking juices.
