Homemade Bao Buns
  1. Place flour, milk powder, baking powder, yeast, and sugar in a large bowl.

  2. Mix vegetable oil and water in a separate bowl.

  3. Make a well in the dry ingredients and pour in the liquids.

  4. Stir with a spoon and then use your hands to knead until the dough comes together.

  5. Knead for 5 minutes until smooth, adding extra flour if needed.

  6. Cover and rest the dough in a warm place for 90 minutes or until doubled in size.

  7. Transfer the dough to a work surface, dust with flour, and 'punch down' the dough by kneading.

  8. Roll the dough out to 1cm thick and cut out rounds.

  9. Fold rounds in half, flatten slightly, and place on squares of baking paper.

  10. Set aside to prove for 30 minutes.

  11. Steam buns for 12 minutes, then allow them to rest over hot water for 5 minutes.

  12. Buns can be made ahead and steamed to reheat before serving.
