Preheat oven to 180 degrees c
In an ovenproof dish combine the mashed banana, oats, protein powder, baking powder, milk, lemon juice & zest. Mix well.
Warm the blueberries in the microwave for 30s at a time until jammy then add the yogurt & blueberries on top and swirl in.
Top with extra lemon zest.
Bake for 30-40mins at 180 degrees c until a knife comes out clean.
Cut into 4 equal slices.
This will keep in the fridge for up-to 3 days! Simply reheat in the microwave for 1 min when you’re ready to enjoy. I like mine with yogurt & maple syrup!
