Creamy Ricotta Pasta
  1. Boil pasta in salted water.

  2. While it cooks, rub a peeled garlic clove around a large mixing bowl.

  3. Add ricotta, Parmigiano, lemon zest, olive oil, salt, and pepper to the bowl. Mix well.

  4. Add drained pasta straight to the bowl, along with a splash of pasta water.

  5. Tear in some fresh basil, give everything a toss, and serve.
