Fiery Dan Dan Noodles
  1. Mix the sauce ingredients in a bowl until fully combined then set aside

  2. Fry the mince over a high heat in a frying pan until golden, this will take around 4 minutes

  3. Add in the garlic and ginger and cook for a further minute

  4. Pour in the soy and rice wine then stir well until the mince is fully coated

  5. Add the white part of the spring onion

  6. Cook the noodles to the packet instructions then toss these through the sauce, adding a little cooking liquid from the noodles to give them a saucier consistency

  7. Portion into bowls then garnish with the mince, Chinese greens, spring onions, peanuts and some more chilli crisp
