Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the cottage cheese, eggs, sugar, sour cream (or yogurt), vanilla extract, baking soda, and salt. Use a hand mixer or food processor to blend the mixture until smooth but with some texture from the cottage cheese. If using, gently fold in the raisins and lemon zest.
Grease a round or square 8x8-inch baking dish with butter. Pour the cheesecake batter into the dish and smooth the top with a spatula.
Bake in the preheated oven for 30-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Remove the zapekanka from the oven and let it cool in the dish for 10-15 minutes. Transfer it to a wire rack to cool completely. Optionally, dust with powdered sugar before slicing.
