Zapekanka (ukrainian Cheesecake)
  1. Preheat your oven to 350°F (175°C).

  2. In a large mixing bowl, combine the cottage cheese, eggs, sugar, sour cream (or yogurt), vanilla extract, baking soda, and salt. Use a hand mixer or food processor to blend the mixture until smooth but with some texture from the cottage cheese. If using, gently fold in the raisins and lemon zest.

  3. Grease a round or square 8x8-inch baking dish with butter. Pour the cheesecake batter into the dish and smooth the top with a spatula.

  4. Bake in the preheated oven for 30-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

  5. Remove the zapekanka from the oven and let it cool in the dish for 10-15 minutes. Transfer it to a wire rack to cool completely. Optionally, dust with powdered sugar before slicing.
