In a large pan add oil and cook chicken seasoned with paprika, garlic, onion salt & oregano on both sides(5-7mins) until golden & just cooked, remove and set aside.
Add shallots and cook on low heat until softened, mix in garlic for 1-2 mins.
Add mushrooms, season and cook over high heat until golden, melt butter.
Add cherry tomatoes and cook for 2-3 mins, pour in cream, season and bring to a simmer.
Grate in Parmesan & add spinach, cook until spinach has wilted for 2-3 mins.
Add chicken back in and simmer for 7-10 mins until chicken has heated through.
Serve with Parmesan and fresh basil 🌿
