In a saucepan over medium heat, add the frozen blueberries and cherries along with the fruit juice. Give it a stir and leave it undisturbed in the pan until it begins to boil and the fruit starts to release their liquid.
Continue to cook, stirring occasionally, for 4 to 5 minutes to soften and break down the fruit. (Note: If using fresh berries, you’ll need to shorten the cooking time; fresh berries cook quicker because they release less liquid. Cook until berries are soft and begin to break down.)
Remove from heat and stir in chia seeds, vanilla extract and almond extract. Mix well, mashing the fruit with the back of the spoon to release its juices and break them apart. Let the compote sit for 10 minutes to allow the chia seeds to swell.
Enjoy at room temperature or reheat before serving. Refrigerate in an airtight container for up to 1 week.
In a microwave-safe bowl, combine the frozen fruits and juice. Cover and microwave for 2 to 3 minutes or until the fruit start to release their liquid and break down.
Remove from the microwave, add chia seeds and extracts and stir to combine, mashing the fruit with the back of a spoon to break it down.
