Heat oil over medium heat in a large skillet. Add in your tomatoes & onions.
Once nice and soft (about 5 mins) add in your garlic. Cook until fragrant. Season w a pinch of salt.
Make a little hole in the middle and add in your ground beef. Let it develop a sear before you chop it up.
Cook it down, and once it’s almost done season with ½ tsp salt, pepper, cloves, jalapeños, and jalapeños brine. Make sure to stir often.
Let it cook for a few mins before adding carrots, potatoes, and finally after a few mins tomato paste. Let’s this cook for 3-4 mins so all the flavors come together.
Add in two cups of chicken broth, bay leaves, and a pinch of salt. Bring to a simmer.
Cover and lower heat to medium low. Cook for 20-25 mins, or until the potatoes are soft. Adjust any seasonings to your liking.
Serve on some tostadas or with some rice. Top with queso fresco & enjoy babe!
