In a small sauce pan, combine, water, vinegar, sugar and soy sauce. (Add turmeric and coloring if desired) Bring to a boil and stir to dissolve sugar. About 2-3 minutes.
In a small bowl, make slurry by combining cornstarch and water. Dissolve to ensure there aren't any clumps.
Bring sauce down to a low simmer and pour in slurry while continuing to stir. Sauce will thicken right away. After about 1-2 mins of thickening, turn heat off.
Enjoy at room temperature or warm or store in air tight container. Can be stored for up to 1 week in the fridge.
