Vegan Tandoori Tofu
  1. Press tofu for 30 minutes to remove moisture, then cut into large cubes. Drier tofu absorbs marinade better and crisps up beautifully.

  2. Mix plant based yoghurt, tandoori masala, garam masala, cumin, paprika, chilli powder, garlic, ginger, lemon juice, tomato puree, and salt until you have a vibrant marinade.

  3. Add tofu cubes and toss to coat completely. Cover and refrigerate for at least 2 hours, or overnight for maximum flavour.

  4. Preheat oven to 220°C and line a baking tray. Arrange marinated tofu pieces with space between them. Drizzle with oil and roast for 25 to 30 minutes, flipping halfway, until edges are charred and crispy.

  5. Arrange salad leaves, cucumber, tomatoes, and red onion on a platter. Top with the charred tofu, scatter fresh coriander, and serve with lemon wedges.
