Brie Bites
  1. Let puff pastry thaw on the counter while you cook the onion.

  2. Add diced onion to a pan with a few tbsp butter.

  3. Cook on medium heat until it’s translucent and browned.

  4. Take off heat and let cool.

  5. Cut Brie into bite sized pieces.

  6. Next on a parchment lined sheet open up the puff pastry like a book.

  7. Cut each sheet into 9 even squares.

  8. Next cut the shape of a square into the tops of each one.

  9. Top with 2 tbsp of fig jam followed by one small chunk of brie.

  10. Top with caramelized onions and a tsp of bacon bits.

  11. Next make the egg wash by combining 1 egg with 1 tbsp water.

  12. Brush the sides of the puff pastry squares.

  13. Next sprinkle with dried thyme and salt.

  14. Bake at 400 degrees for 20 minutes!
