Quinoa-and-spinach Pilaf
  1. In a large saucepan, melt butter over medium.

  2. Add onion and garlic; cook until soft, about 4 minutes.

  3. Add quinoa and cook 1 minute.

  4. Add water and bring to a boil.

  5. Reduce heat and simmer, covered, until water is absorbed, about 20 minutes.

  6. Stir in spinach and lemon zest, then season with salt and pepper.
