Preheat your oven to 350°F (175°C).
Line a baking sheet with parchment paper to prevent the cookies from sticking.
In a mixing bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy. This should take about 2-3 minutes.
Mix in the freshly grated lemon zest to the butter and sugar mixture, ensuring it is evenly distributed.
Gradually add in the all-purpose flour and any other dry ingredients specified in the recipe, mixing until combined.
Once the ingredients are mixed, take spoonfuls of the dough and form them into small balls. Place them on the prepared baking sheet.
Use the bottom of a glass or your fingers to gently flatten each dough ball into a thick disc.
Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the edges are lightly golden.
Once baked, remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
