Christmas Honey Garlic Herb Pork Roast
  1. Pat roast dry with paper towels.

  2. Mix olive oil, garlic, honey, Dijon, thyme, rosemary, paprika, black pepper, and salt.

  3. Rub mixture all over the pork.

  4. Heat a skillet over medium-high heat.

  5. Sear pork 2–3 minutes per side until browned.

  6. Place in a roasting pan or foil tray.

  7. Preheat oven to 350°F (175°C).

  8. Pour broth (or apple juice) into the bottom of the pan to keep things moist.

  9. Roast 1 hour to 1 hr 20 min, or until internal temp reaches 145°F (63°C).

  10. Remove from oven and let rest 10 minutes before slicing.

  11. Slice and spoon pan juices over the pork.

  12. Garnish with fresh herbs if desired.

  13. Brush with extra honey in the last 10 minutes for glossy caramelized perfection.
