Apple Yogurt Cake
  1. Preheat the oven to 190°C (375°F) and lightly grease a baking dish.

  2. Cut apples into small cubes, add to food processor, puree. OR cut into thin slices or small cubes for more texture.

  3. In a medium bowl, whisk the eggs and yogurt until smooth and slightly frothy.

  4. Stir apples into the mixture to coat evenly.

  5. Add 1–2 tbsp sugar if desired, or leave it naturally sweet.

  6. Spread the mixture evenly in the prepared baking dish.

  7. Place in the oven and bake for 40 minutes, or until golden and set.

  8. Cool slightly in the pan for at least 15 minutes.

  9. Cut into squares or wedges and enjoy warm or cold.

  10. Refrigerate leftovers for up to 3 days in an airtight container.
