Potatoes O'Gratin
  1. Preheat oven to 400˚F. Grease a casserole dish.

  2. Grate 2mm thinly slice potatoes – using a mandolin.

  3. Fry bacon with onions.

  4. Grate three cheeses.

  5. Combine Gruyere, Fontina, Parmesan cheeses and heavy cream. Add fried bacon with onions, roasted garlic, salt/pepper and fresh thyme.

  6. Add sliced potatoes and toss together.

  7. Put in a baking dish, cover with foil and put in the oven for an hour.

  8. After an hour, remove the foil and bake until golden brown.

  9. Sprinkle with chives.
