Season the ribeye steaks with salt and pepper on both sides.
Heat the olive oil in a cast iron skillet over medium-high heat.
Sear the steaks for 4-5 minutes on each side for medium-rare, or longer if desired.
Remove the steaks from the skillet and set aside to rest.
In the same skillet, add the bourbon and deglaze the pan, scraping up any browned bits.
Stir in the heavy cream, Worcestershire sauce, garlic, smoked paprika, and cayenne pepper.
Simmer the sauce for 3-4 minutes until it thickens slightly.
Stir in the butter until melted and incorporated into the sauce.
Return the steaks to the skillet and coat them in the bourbon cream sauce.
