Chicken Caesar Loaded Jacket Potatoes

  1. Preheat the oven to 200 degrees. Stab each potato with a fork then place in the microwave for 15 minutes.

  2. Remove potatoes from microwave, drizzle olive oil all over each potato and sprinkle some salt and pepper on them then wrap individually in foil and place in the oven for 45 minutes.

  3. Meanwhile, add diced chicken to a bowl with garlic, oregano and some salt and pepper and mix until all chicken is coated. Add to a frying pan or airfryer on 200 degrees with a drizzle of oil. Fry for 15 minutes over a medium heat or airfry for 12 minutes.

  4. Remove and roughly chop up then add to a large mixing bowl.

  5. Add the bacon to the airfryer and airfry on 200 degrees for 10 minutes until crispy and slightly crunchy. Alternatively, add to a preheated grill and grill for 10 minutes or fry for 10 minutes. Remove and let the bacon cool then roughly cut it up and add to a bowl. (I left a few bits out to add at the end)

  6. Chop up 4 spring onions and add them in to the bowl too with the parmesan, mayo and caesar dressing and mix well.

  7. When the time is up on the jacket potatoes, remove them from the foil, slice them open and add a knob of butter to each one then spoon the caesar mixture into each one. Top with a few bits of crispy bacon and spring onions and serve warm
