Sauté onions and jalapeño in olive oil with salt and pepper.
Add beans, tomatoes, Chipotle peppers, green chilies, beer and brisket,
Stir in beef stock and seasonings (chili powder, cumin, coriander, cinnamon, garlic, paprika, cayenne, cocoa powder).
Bring to a boil, then reduce to a simmer and cover. Cook for 1 hour.
Add Worcestershire, brown sugar, and honey. Simmer uncovered for 2-3 more hours, stirring occasionally, until thickened.
Serve with green onions and cheese.
