Caprese Zucchini Boats
  1. Heat a grill-pan over medium heat.

  2. Cut zucchini in half lengthwise. Brush the cut side of the zucchini with olive oil and season with salt and pepper.

  3. Place zucchini, cut side down and cook until the zucchini is charred and beginning to soften, about 8-10 minutes.

  4. Turn zucchini over and layer mozzarella cheese and tomatoes. Sprinkle with salt/pepper.

  5. Place in a preheated oven at 220C for 10-15 minutes.

  6. Then top with basil and drizzle of balsamic glaze. Serve warm!
