Cocktail Cherries (DIY Luxardos but better)
  1. Sanitize mason jars, ring, and lids. Use smaller size jars. (Once opened they must be refrigerated and they do spoil.)

  2. Pit the cherries. Save both the pits and cherries in separate containers.

  3. Toast the pits in your saucepan until they begin to smell like almonds.

  4. Add 3 cups of water to your pan.

  5. Add 1 ½ to 2 cups of hibiscus leaves and 10 to 15 whole star anise into the pan.

  6. Stir together well and bring to a simmer.

  7. Once simmering, add 3 cups of brown sugar and bring to a simmer again.

  8. Let simmer for up to 20 minutes to let flavors come together.

  9. Strain syrup into a container with a pour spout.

  10. Place pitted cherries into jars and then top off with syrup. Leave ½ of head space.

  11. Place lid on jar. Place ring on finger tight.

  12. Water bath can in boiling water for 10 minutes.

  13. Once done, let sit for "24 hours" and then shelve and/or enjoy!
