Garlic Herb Skirt Steak
  1. Whisk together the olive oil, soy sauce, coconut aminos, lime juice, lime zest, garlic, maple syrup, cumin, smoked paprika, and black pepper. Stir in the parsley, cilantro, and sliced red onion.

  2. Add the skirt steak and coat thoroughly. Cover and refrigerate for 2–4 hours.

  3. Remove the steak from the refrigerator 20–30 minutes before cooking. Lift it from the marinade and pat off any excess moisture so it sears instead of steaming. Set aside marinade.

  4. Heat a cast-iron skillet over high heat until very hot. Sear the steak for approximately 2–3 minutes per side.

  5. Transfer to a cutting board and let rest for 7–10 minutes.

  6. Meanwhile, reduce the heat to medium and sauté the reserved onions in the same skillet for 3-4 minutes, until softened, caramelized, and fully cooked.

  7. Slice the steak thinly against the grain and serve topped with caramelized onions, additional fresh herbs, and fresh lime.
