Wash zucchini and slice them into thin rounds
Beat the egg in one bowl
In another bowl mix Parmesan, breadcrumbs, garlic powder, paprika, salt and pepper
Dip each zucchini slice into the egg, then coat with the breadcrumb mixture
Place slices on a baking tray lined with parchment paper
Sprinkle mozzarella cheese on top of the slices
Brush lightly with olive oil and bake at 200°C (400°F) for 18-20 minutes until golden and crispy
Sprinkle with parsley and serve hot
