Preheat the oven to 200℃
Place the dates (and lemon zest if you are using) in a pot and cover with water. Simmer until the dates are soft and their is no liquid left.
Add all the ingredients into a large mixing bowl in the order of ingredients listed.
Tip out onto a floured surface.
Sprinkle flour on the top of the mixture, and gently roll the dough in the flour to make a ball.
Gently pat into a 3-4cm high rectangle or round (you choose).
Cut into even pieces (will make about 8-12) and place on a lined tray.
Pop in the oven for 15-20 mins.
Allow to cool before pulling apart.
