Add the pulp and nuts or nut butter to the bowl of a food processor. Let it run for 10 to 15 seconds or just until the mixture is chunky.
Add the honey, cacao, chia seeds, coconut flakes vanilla, cinnamon, and salt, and process until incorporated. Squeeze some of the mixture between your fingers; it should stick together. If its not sticky/moist enough to stay clumped add small amounts of water or honey/maple syrup until the right consistency
Shape into balls and store spaced apart to chill in fridge or freezer. Once chilled they can be condensed into a smaller container and kept stored in the fridge.
