Get a pot of boiling water on the hob, add a large pinch salt along with that pasta (leave to boil for around 10 minutes)
Meanwhile roughly chop the garlic, add to a pan with the tomatoes (don’t bother chopping them) the roasted red pepper and fry for around 6-7 minutes
Add the harissa paste or seasoning along with that pasta water & hummus and mix together, smushing those tomatoes to release all the juices
Drain the pasta (don’t worry if there’s more of that pasta water left over) and mix together
Top with more salt, pepper and that freshly chopped parsley
