Preheat oven to 425°F (220°C) and line a sheet pan with parchment paper.
Whisk together balsamic vinegar, soy sauce, honey, garlic, and herbs.
Toss the steak in half the marinade. In another bowl, toss veggies with olive oil, salt, and pepper.
Spread veggies on the sheet pan. Add steak pieces, keeping them in a single layer.
Bake for 12–15 minutes, flipping halfway, until steak is cooked to your liking and veggies are tender.
Drizzle remaining marinade over everything or reduce it in a pan for a thicker glaze.
