Season front & back of chuck roast with seasonings of choice. (Ranch seasoning is key)
Sear both sides until you get a crispy golden brown color.
Set roast aside
In the same pot, add 4 cups of beef broth.
Deglaze the pot
Add in ranch seasoning packet & Au jus gravy packet.
Add 3-4 cups of water.
Place roast in pot
Add 3-5 peperoncini’s
Add some peperoncini juice (⅓ of a cup)
Bake at 300 for 4 hours.
When you have an hour and a half left, add in diced potatoes.
Roast is ready when it’s fork tender
Serve over rice.
