  1. Peel and chop all of the vegetables into a macedoine.

  2. Thoroughly mix all of the minced flesh, vegetables, herbs, seasoning, egg whites and cold stock (this is called the clarification) together and allow to stand for 30 minutes.

  3. Mix well with the hot stock and bring to the boil as quickly as possible. Keep the bottom of the pan clear by using a spatula, but avoid disturbing the clarif.

  4. Allow to simmer gently for 2-3 hours.

  5. Strain through a dampened muslin cloth and adjust the seasoning with salt only.

  6. Serve in a warm consommé cup with vegetables and Julienne strips.
